Spinach and Tomato Toasts
A quick and delicious dinner featuring sautéed spinach and fresh tomatoes on crispy toast.
Ingredients
- 4 slices toast, your choice of bread
- 2 cups spinach, fresh or thawed if frozen
- 1 cup tomatoes, diced, can substitute with canned tomatoes
- 2 tablespoons olive oil, for sautéing
- Salt and pepper, to taste
Steps
- Heat olive oil in a skillet over medium heat.
- Add spinach and sauté until wilted, about 2-3 minutes.
- Stir in diced tomatoes and cook for another 2-3 minutes until heated through.
- Season with salt and pepper to taste.
- Toast the bread slices until golden brown.
