Cheesy Spinach and Tomato Toasts
A quick and delicious dinner featuring cheesy toast topped with fresh spinach and tomatoes.
Ingredients
- 4 slices of toast
- 2 cups fresh spinach, chopped
- 1 cup arugula (rukola), optional for extra flavor
- 1 cup cheddar cheese, shredded
- 1 cup cottage cheese
- 3 tomatoes, diced
- Salt and pepper to taste
- Olive oil for drizzling
Steps
- Preheat your oven to 400°F (200°C).
- Place the toast on a baking sheet and drizzle with a little olive oil.
- In a bowl, mix the chopped spinach, diced tomatoes, and arugula (if using). Season with salt and pepper.
- Spread the cottage cheese evenly over each slice of toast.
- Top with the spinach and tomato mixture, then sprinkle with shredded cheddar cheese.
- Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a minute before serving.
