Cheesy Ham and Egg Toast with Fresh Salad
A quick and satisfying dinner featuring cheesy ham toast and a refreshing cucumber-tomato salad.
Ingredients
- 4 slices toast
- 4 eggs
- 4 slices ham
- 1 cup cheddar, shredded
- 1 tomato, diced
- 1 cucumber, sliced
- Salt and pepper to taste
- Olive oil or any cooking oil for the salad
Steps
- Preheat a skillet over medium heat.
- In a bowl, combine diced tomato and sliced cucumber; drizzle with oil, and season with salt and pepper.
- In the skillet, cook the ham for 1-2 minutes until slightly crispy, then set aside.
- In the same skillet, crack the eggs and cook to your preference (sunny-side up, scrambled, etc.).
- While the eggs are cooking, toast the slices of bread until golden.
- Top each slice of toast with cooked ham and shredded cheddar; place under a broiler briefly to melt the cheese, if desired.
