Spinach and Tomato Toasts
A quick and nutritious lunch featuring fresh spinach and juicy tomatoes on crispy toast.
Ingredients
- 4 slices of toast
- 2 cups fresh spinach, washed
- 2 medium tomatoes, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: garlic, minced
Steps
- Heat olive oil in a pan over medium heat.
- Add garlic if using, and sauté for about 1 minute until fragrant.
- Stir in the spinach and cook until wilted, about 2-3 minutes.
- Add diced tomatoes, salt, and pepper; cook for another 2-3 minutes until heated through.
- Toast the bread slices until golden brown.
- Top each slice of toast with the spinach and tomato mixture, and serve warm.
